Banana Almond Ice-Cream

Did you think you had to say goodbye to ice-cream when you became vegan? Luckily, that is not the case! Vegan ice-cream can be made at home in a sturdy blender. Combine one frozen banana, 1 tablespoon cocoa powder, 1 teaspoon raw agave, and almond milk to taste (start with a half a cup, and add more if you want a softer texture). Add the milk slowly so that you can get to the right consistency. This is an amazingly healthy alternative to a classic favorite!

What you’ll need:

1 frozen banana

1 tablespoon cocoa powder

1 teaspoon raw agave

Almond milk to taste (start with a half a cup, and add more if you want a softer texture)

Health-Lovers Chocolate Brownies

You can make easy chocolaty brownies with applesauce instead of eggs! Combine your dry ingredients (2 cups sugar, 2 cups flour, 3/4 cups cocoa powder, and 1 teaspoon baking powder) in a bowl and mix them up. Next add in the wet ingredients ( 1 cup water, 1 teaspoon vanilla, 1 cup applesauce) to make the mixture into a smooth brownie batter. Bake for half an hour at 350 degrees, and enjoy!

What you’ll need:

2 cups sugar

2 cups flour

3/4 cups cocoa powder

1 teaspoon baking powder

1 cup water

1 teaspoon vanilla

Simple Strawberry Parfait

For a quickie bite for a sweet–tooth attack, you can slice up a half cup of strawberries and serve them over a cup of creamy coconut milk yogurt. Keep some vegan-friendly granola in a sweet flavor on hand to sprinkle a few tablespoons on top, and voila! You have a simply delicious parfait in just seconds.

What you’ll need:

1/2 cup fresh strawberries

1 cup coconut yogurt

2 tablespoons granola

Nutty Apple Crisp

Did you know that the flavor of an apple crisp should be all about the apples? A vegan apple crisp allows the natural apple flavor to shine. Use organic Macintosh or Fuji apples for a hearty, sweet taste. Mix in tart granny smiths for a rounded flavor. Top 6 chopped apples with 1 teaspoon cinnamon, 1 tablespoon sugar, and pads of coconut oil (about 1/4 cup will do). Sprinkle a mixture of 1 cup of oats, 1/2 cup coconut flower, 1/4 cup chopped pecans, and 1/2 cup coconut oil over the top. Bake at 350 for 30 to 40 minutes, just until it is soft and smells irresistible!

What you’ll need:

6 apples (a variety)

1 teaspoon cinnamon

1 tablespoon sugar

1/4 cup coconut oil (with the apples)

1/2 cup coconut oil (in the topping)

1 cup old-fashioned rolled oats

1/2 cup coconut flour

1/4 cup chopped pecans

1/2 cup coconut

Avocado Pudding

Just because it is dessert doesn’t mean that should lack nutritional value! Why not include some avocados in your dessert menu? Avocados are packed with healthy fats, and leave you feeling full and satiated. The creamy texture of avocado works well as the foundations for this whipped pudding recipe.

Combine 1 ripe avocado with 1/2 bar of melted vegan chocolate of your choice. Put this mixture into a blender or food processor with 1 teaspoon raw agave, 2 tablespoons cashew milk, a touch of salt (about a 1/4 teaspoon), 1 heaping tablespoon of cocoa powder, and 1 teaspoon vanilla extract. Whip this up until it is light and looks just like the traditional chocolate pudding you are used to! You can fill little glasses with this and chill them so that you have desserts ready to go for the next few nights.

What you’ll need:

1 ripe avocado

1/2 bar of melted vegan chocolate

1 teaspoon raw agave

2 tablespoons cashew milk

a touch of salt (about a 1/4 teaspoon)

1 heaping tablespoon of cocoa powder

1 teaspoon vanilla extract

Enjoy these refreshing vegan desserts all year long!
